Peppermint brownie truffles

Peppermint Brownie Truffle
Makes 48

Rich and delicious brownie truffles with just a hint of peppermint

Prep Time – 10 min
Cook Time – 30 min
Total Time – 1 hr

1 box family size brownie mix (I prefer Betty Crocker, but any brand will work) – prepared as box directs in a 9×13 pan
1/2 cup mini chocolate chips (if using regular size, chop before adding in)
1/2 cup crushed peppermint pieces
6 oz white chocolate almond bark
additional crushed peppermint for decorations

1.Line a 9×13 pan with parchment paper
2.Preheat oven to 350 (or as the box directs)
3.Mix brownies in a bowl
4.Stir in mini chocolate chips & peppermint pieces
5.Pour brownie mixture into prepared pan
6.Bake 3-4 minutes less than directed on the box, you want them done but still a little fudgy in the center
7.Remove from oven and let cool in the pan for 10 minutes
8.Remove brownies from pan, using the parchment paper to a cooling rack and let cool completely
9.Cut brownies into 48 small pieces
10.Roll each piece into a ball, set aside
11.In a microwave safe bowl melt almond bark in microwave, stirring after each 30 second interval – should take 2-3 minutes to melt
12.Line a large baking sheet with parchment paper
13.Using a fork dip each ball into melted chocolate and shake off any excess chocolate
14.Carefully place on parchment paper
15.Immediately decorate with crushed peppermint
16.Continue process until all brownie balls are coated
17.**Reheat chocolate as necessary to complete the process
18.Let brownie balls set-up completely either in the refrigerator or at room temperature, until ready to serve
