A perfect egg-free sweet treat to include in your Diwali platters this year.
Ingredients(Yield: 36 slices)
125 g SPAR margarine
125 ml SPAR white or brown sugar
2 ml almond essence
250 g bar pitted dates
150 g dried fruit cake mix
1 packet coconut tea biscuits, crushed
Gently heat the margarine, sugar and essence together in a heavy-based saucepan. Add both dried fruits and stir over medium heat until thick and sticky.
Stir in the coconut biscuits thoroughly. Turn the mixture onto a cleaned worktop and shape the mixture into 3 x 3 – 4 cm diameter rolls. Roll each one in coconut until evenly coated. Wrap each roll firmly in foil and refrigerate for at least 1 hour.
Cut off 1cm slices.
Hints and Tips
Crush the biscuits in your hands, not in a processor or with a rolling pin. The idea is retain texture and not reduce them to crumbs.
