Onion, Avocado and tomato salad / Sambal
2 onions chopped finely
2 tomatoes chopped finely
1 cup of chopped coriander
3/4 cup of vinegar
5 tablespoons of sugar
1 teaspoon of pepper
A pinch of salt
1 avocado peeled and chopped into cubes
Allow chopped onions to sit in boiling water for 10 minutes – drain .
Mix all the ingredients in a glass bowl , cover with clingwrap and chill in fridge until ready to serve with your main meal .
